Over years, the process of making gelato has naturally evolved and developed with practice and technology. With very few ingredients, the first gelato was made. Egg yolks were key in the process using them as the main stabilizer, then sugar and milk (or water for sorbet) were added, heated in pan and then cooled down. Fresh fruit, nuts, chocolate and other ingredients are added to give the gelato its flavor, before batching it. This process of batching is freezing it and incorporating air, which gives it the amazingly nice, smooth texture. This is a very time consuming and hard old fashion process, and it limits you to make very few of the traditional flavors but still, it preserves the original taste and flavor with which gelato was created.
